Operating since 1928, El Molino is the bakery where the story of Bimbo began. In the early 1940s, Jaime Sendra, the production chief here, convinced owner Lorenzo Servitje to experiment with industrial sliced bread — the innovation that eventually launched the Bimbo empire.

Today it's still a working bakery and pastry shop on 16 de Septiembre, turning out traditional Mexican pan dulce, pastries, cakes, and snacks. The pipshas are a recurring order. It's cash-friendly, moderately priced, and open daily from 8am to 8:30pm.
